The winemaking process combines short carbonic maceration with gentle pressing, followed by fermentation with native yeasts in concrete tanks. The wine then ages for 9 months in the same concrete vessels, preserving its pure fruit character. This light, elegant wine pairs well with cured meats and oily fish.
